Location and soil

Our Cabernet comes from our sunny location in Kardaun with skeletal soils of quartz and porphyry 200 meters above sea level

The Merlot, on the other hand, grows on our steep southern slope above Bolzano in Oberlaitach at 550 meters above sea level, also on a soil of quartz and porphyry.


Training system

Spur with 9500 vines/ha


Harvest period

End of October to beginning of November


Management

Close to nature, a lot of manual work and very little use of machinery


Vinification

Destemming, traditional mash fermentation in stainless steel barrels with fermentation temperature control; subsequent racking, merging of the two varieties, as well as malolactic fermentation in barrique barrels, where it matures for a further 17 months; then 3 months storage in stainless steel barrels and 3 months bottle ageing


Characteristics

Its fine ruby red color in combination with its fullness and straightforward aromas of black pepper and dark chocolate give it that certain something. The fruity taste of blackberries and currants, supported by its noble acidity, results in a very long finish with a wonderful drinking sensation.

Alcohol: 14.5%vol


Food recommendations

It is the perfect accompaniment to lamb, grilled meat, game, spicy chicken and mature cheese, pears and grapese
